Ingredients

  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon mayonnaise
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • Fresh parsley, chopped (for serving)
  • Lemon wedges (for serving)


Instructions

  1. Preheat your oven to 400°F (200°C) to ensure even cooking.
  2. Drizzle olive oil over the chicken breasts, then season them evenly with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Sear the seasoned chicken in a large skillet over medium heat for about 3-4 minutes per side, or until just browned.
  4. Combine panko breadcrumbs, grated Parmesan, shredded mozzarella, melted butter, mayonnaise, dried parsley, and garlic powder in a bowl. Mix well.
  5. Transfer the seared chicken to a baking dish and top with the Parmesan mixture. Bake for approximately 20-25 minutes.
  6. Remove from the oven and let rest before garnishing with chopped fresh parsley and serving with lemon wedges.
