Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes (halved)
- 1 medium onion (sliced)
- 3 cloves garlic (minced)
- 1/4 cup olive oil
- 1/4 cup chicken broth
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- 1/2 tsp crushed red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese
- Chopped fresh parsley
Instructions
- Place the chicken breasts in the bottom of the crockpot. Layer the halved baby potatoes, sliced onion, and minced garlic on top.
- Whisk together the olive oil, chicken broth, Italian seasoning, salt, black pepper, paprika, thyme, and crushed red pepper flakes until well combined.
- Pour the mixture over the chicken and vegetables in the crockpot, ensuring everything is evenly coated.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is fully cooked and the potatoes are tender.
- Once done, sprinkle with grated Parmesan cheese and chopped fresh parsley before serving.
