Quick and flavorful shredded chicken tacos made easily in the Instant Pot, perfect for busy weeknights.

Ingredients

  • 1 pound chicken breast
  • 1 cup chicken broth
  • 1 packet taco seasoning
  • 8 corn tortillas
  • Toppings: diced tomatoes, shredded lettuce, cheese, sour cream, guacamole

Instructions

  1. Place the chicken breasts in the Instant Pot.
  2. Pour the chicken broth over the chicken and add the taco seasoning.
  3. Close the lid securely and set the Instant Pot to ‘Manual’ for 15 minutes.
  4. Perform a quick release of the pressure once cooking is complete.
  5. Shred the chicken with two forks until fluffy.
  6. Fill each corn tortilla with the shredded chicken and serve with your favorite toppings.

Notes

For added flavor, sauté onions and garlic in the Instant Pot before adding the chicken. Experiment with different toppings to customize your tacos.
