Description

Juicy, caramelized chicken infused with a sweet and savory marinade reminiscent of tropical islands.


Ingredients

  • 4 chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 1/4 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1/4 cup ketchup
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste


Instructions

  1. Whisk together the soy sauce, pineapple juice, brown sugar, minced garlic, minced ginger, ketchup, and sesame oil until well combined.
  2. Add the chicken thighs to the marinade, ensuring each piece is fully coated. Cover and refrigerate for at least 120 minutes—overnight is even better for maximum flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken thighs from the marinade and season with salt and pepper to taste.
  5. Grill the chicken for about 6-7 minutes per side, basting with the marinade, until cooked through and the internal temperature reaches 165°F.
