A delicious meal featuring savory, crispy chicken coated in a sweet, buttery sauce, perfect for gatherings and easy weeknight dinners.

  • 1 lb boneless, skinless chicken thighs, cut into 2” pieces
  • 1 tbsp cornstarch
  • 1 tbsp flour (Bob’s gluten-free 1-to-1 is a fantastic substitute)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 3 garlic cloves, thinly sliced
  • 1 tbsp avocado oil
  • 1/4 cup honey
  • 4 tbsp cold unsalted butter
  • 1 tbsp soy sauce (or tamari for a gluten-free option)
  • 1 tbsp rice vinegar
  • Fresh parsley for garnish, finely chopped

Instructions

  1. In a large bowl, add the cornstarch, flour, salt, pepper, and garlic powder. Toss in the chicken pieces, ensuring they’re lightly coated.
  2. Heat the avocado oil in a large skillet over medium heat. Once hot, add the chicken in a single layer. Cook for about 8 minutes on each side until beautifully golden and crispy.
  3. After the chicken is cooked, remove it from the skillet and set aside.
  4. Add the sliced garlic to the hot skillet, cooking for about one minute until fragrant.
  5. Lower the heat and introduce the cold butter, stirring in the honey, soy sauce (or tamari), and rice vinegar. Combine everything well, allowing the sauce to thicken slightly.
  6. Incorporate the chicken back into the skillet, tossing it in the luscious honey butter sauce until fully coated.
  7. Garnish with finely chopped parsley and serve hot for an outstanding meal.

Notes

Serve over rice or with mashed potatoes. Store leftovers in an airtight container for up to three days.
