  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 8 ounces egg noodles
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, sliced carrots, and celery. Sauté until the vegetables are softened—about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute, just until fragrant.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Once boiling, add the shredded chicken, dried thyme, and parsley. Stir well.
  6. Toss in the egg noodles and cook until they are tender—usually around 7-10 minutes.
  7. Season with salt and pepper to your liking.
  8. Serve the soup hot, garnished with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for longer storage. Add a splash of water when reheating to maintain texture.
