Ingredients

  • 4 chicken thighs
  • 1 cup pineapple chunks
  • 1 bell pepper (any color), sliced
  • 1 red onion, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • Cooked rice (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the chicken thighs, pineapple chunks, sliced bell pepper, and red onion in a large bowl.
  3. Whisk together the soy sauce, olive oil, garlic powder, ginger powder, salt, and pepper in a small bowl.
  4. Pour the sauce over the chicken and vegetables, tossing to coat.
  5. Spread the mixture evenly on a large sheet pan.
  6. Roast in the preheated oven for 25-30 minutes, until the chicken is cooked through.
