Description

A comforting dish of tender chicken breasts and baby potatoes slow-cooked in a rich garlic and Parmesan sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup chicken broth
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Prepare the base by layering the halved baby potatoes at the bottom of the crockpot and topping them with the chicken breasts.
  2. Make the garlic Parmesan mixture by combining the Parmesan, garlic, Italian seasoning, salt, pepper, and olive oil in a bowl.
  3. Spread the mixture evenly over the chicken breasts.
  4. Add the chicken broth around the edges of the crockpot.
  5. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked and potatoes are tender.
  6. Garnish with fresh parsley before serving.

Notes

Monitor cooking times closely to prevent dry chicken. Feel free to customize with your favorite vegetables.
