Ingredients
- 4 boneless, skinless chicken breasts
- 1 pound baby potatoes, halved
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup chicken broth
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Prepare the base by layering the halved baby potatoes at the bottom of the crockpot and topping them with the chicken breasts.
- Make the garlic Parmesan mixture by combining the Parmesan, garlic, Italian seasoning, salt, pepper, and olive oil in a bowl.
- Spread the mixture evenly over the chicken breasts.
- Add the chicken broth around the edges of the crockpot.
- Cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked and potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
