  • 2 large chicken breasts
  • Salt and pepper to taste
  • Olive oil for cooking
  • 1/2 cup pesto
  • 1/2 cup mozzarella cheese, shredded


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the chicken breasts by slicing them horizontally, creating a pocket.
  3. Season both sides generously with salt and pepper.
  4. Stuff each chicken breast pocket with pesto and shredded mozzarella.
