Ingredients
- 2 large chicken breasts

Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly the chicken breasts by slicing them horizontally, creating a pocket.
- Season both sides generously with salt and pepper.
- Stuff each chicken breast pocket with pesto and shredded mozzarella.
- Secure the opening with toothpicks if necessary.
- Sear the stuffed chicken breasts for 3-4 minutes on each side in a skillet with olive oil.
- Transfer to a baking dish and bake for 20-25 minutes until cooked through.
- Let rest for a few minutes before slicing and serving.
