Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 pound spaghetti
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 8 ounces cream cheese, softened
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Optional: Red pepper flakes for extra heat


Instructions

  1. Cook the spaghetti according to package directions in a pot of salted boiling water until al dente. Drain and set aside.
  2. Sear the chicken pieces with Cajun seasoning and smoked paprika in a large skillet with olive oil until browned and cooked through, about 6–8 minutes. Remove and set aside.
  3. Make the roux by melting butter in the skillet, adding minced garlic, and sautéing for 1 minute until fragrant.
  4. Create the sauce by sprinkling flour and whisking continuously, then gradually whisk in milk and chicken broth. Bring to a gentle simmer.
  5. Add cream cheese and 1 cup of mozzarella to the sauce, stirring until melted and smooth. Stir in Parmesan, salt, pepper, and red pepper flakes if using.
  6. Reintroduce the cooked chicken into the sauce for 2–3 minutes until heated through.
  7. Combine the spaghetti with the sauce in the skillet, tossing to coat.
  8. Melt the remaining mozzarella on top, cover, and let sit for 2–3 minutes until bubbly.

Notes

Consider adding fresh herbs as a garnish for a beautiful presentation. Adjust seasoning according to the heat level of your Cajun seasoning.
