Description

A creamy and savory casserole featuring tender shredded chicken, cream cheese, and cheddar cheese, perfect for weeknight dinners.


Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 1 cup cooked rice
  • 1/2 cup green onions, chopped
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 cup corn (optional)
  • 1 cup cooked bacon, crumbled (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the softened cream cheese, sour cream, ranch seasoning, and shredded chicken in a large mixing bowl until smooth and creamy.
  3. Stir in the cooked rice, chopped green onions, and corn if using.
  4. Fold in the shredded cheddar cheese until fully incorporated.
  5. Pour the mixture into a greased casserole dish, spreading it out evenly.
  6. Sprinkle crumbled bacon on top if desired.
  7. Bake for 25-30 minutes, until heated through and bubbly.
  8. Remove from oven, let cool for a few minutes, and serve warm.

Notes

For a lighter version, use low-fat cream cheese or Greek yogurt. This casserole can be prepared ahead of time and stored in the refrigerator for up to 3 days.
