Ingredients
- 2 cups cooked rotisserie chicken, shredded
- 1 cup cooked rice
- 1/2 cup green onions, chopped
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 1 cup corn (optional)
- 1 cup cooked bacon, crumbled (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the softened cream cheese, sour cream, ranch seasoning, and shredded chicken in a large mixing bowl until smooth and creamy.
- Stir in the cooked rice, chopped green onions, and corn if using.
- Fold in the shredded cheddar cheese until fully incorporated.
- Pour the mixture into a greased casserole dish, spreading it out evenly.
- Sprinkle crumbled bacon on top if desired.
- Bake for 25-30 minutes, until heated through and bubbly.
- Remove from oven, let cool for a few minutes, and serve warm.
Notes
For a lighter version, use low-fat cream cheese or Greek yogurt. This casserole can be prepared ahead of time and stored in the refrigerator for up to 3 days.
