Description

A quick and delightful dish that combines the zesty flavor of lemon with savory pan-fried chicken in a buttery sauce.


Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 2 tablespoons capers
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. Coat each chicken breast in flour, shaking off any excess.
  3. Heat olive oil and 2 tablespoons of butter in a skillet over medium-high heat. Add the chicken and cook until golden brown, about 3-4 minutes on each side.
  4. Remove the chicken from the skillet and set aside, covering loosely with foil to keep warm.
  5. Add lemon juice, chicken broth, and capers to the skillet. Simmer gently, scraping any browned bits from the skillet.
  6. Stir in the remaining butter until melted and incorporated.
  7. Return the chicken to the skillet to soak in the sauce.
  8. Serve on a bed of pasta or rice, garnished with chopped parsley.

Notes

Use fresh lemon juice for best flavor and avoid overcrowding the pan for a nice sear.
