Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 4 tablespoons olive oil
- 4 tablespoons butter
- 1/4 cup fresh lemon juice
- 1/2 cup chicken broth
- 2 tablespoons capers
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts generously with salt and pepper on both sides.
- Coat each chicken breast in flour, shaking off any excess.
- Heat olive oil and 2 tablespoons of butter in a skillet over medium-high heat. Add the chicken and cook until golden brown, about 3-4 minutes on each side.
- Remove the chicken from the skillet and set aside, covering loosely with foil to keep warm.
- Add lemon juice, chicken broth, and capers to the skillet. Simmer gently, scraping any browned bits from the skillet.
- Stir in the remaining butter until melted and incorporated.
- Return the chicken to the skillet to soak in the sauce.
- Serve on a bed of pasta or rice, garnished with chopped parsley.
Notes
Use fresh lemon juice for best flavor and avoid overcrowding the pan for a nice sear.
