A zesty Italian classic featuring tender chicken breasts in a buttery lemon caper sauce, perfect for a weeknight dinner or entertaining guests.
Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 cup flour, for dredging
- 4 tablespoons butter
- 2 tablespoons olive oil
- 1/2 cup fresh lemon juice
- 1 cup chicken broth
- 1/4 cup capers
- 2 tablespoons fresh parsley, chopped
Instructions
- Prepare the chicken by seasoning breasts with salt and pepper and dredging in flour.
- Sear the chicken in a skillet with butter and olive oil over medium-high heat.
- Cook for about 4-5 minutes on each side until golden brown. Remove and set aside.
- Make the sauce by adding lemon juice, chicken broth, and capers to the skillet. Bring to a simmer.
- Return the chicken to the skillet and let simmer in the sauce for about 5 minutes.
- Garnish with chopped parsley and serve hot.
Notes
For a gluten-free option, use a gluten-free flour blend. Chicken alternatives can be swapped for lean turkey cutlets.
