Description

A zesty Italian classic featuring tender chicken breasts in a buttery lemon caper sauce, perfect for a weeknight dinner or entertaining guests.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup flour, for dredging
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup fresh lemon juice
  • 1 cup chicken broth
  • 1/4 cup capers
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Prepare the chicken by seasoning breasts with salt and pepper and dredging in flour.
  2. Sear the chicken in a skillet with butter and olive oil over medium-high heat.
  3. Cook for about 4-5 minutes on each side until golden brown. Remove and set aside.
  4. Make the sauce by adding lemon juice, chicken broth, and capers to the skillet. Bring to a simmer.
  5. Return the chicken to the skillet and let simmer in the sauce for about 5 minutes.
  6. Garnish with chopped parsley and serve hot.

Notes

For a gluten-free option, use a gluten-free flour blend. Chicken alternatives can be swapped for lean turkey cutlets.
