Ingredients

  • 1 pound Ground Chicken
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 8 small Tortillas
  • 1 cup Shredded Mozzarella or Jack Cheese
  • 1/2 cup Chopped Dill Pickles
  • 2 tablespoons Pickle Brine (optional)
  • 1 cup Shredded Cabbage
  • 1/2 cup Cottage Cheese


Instructions

  1. Cook the Chicken: In a skillet over medium heat, add a splash of oil and the ground chicken. Cook until browned, about 5–7 minutes, breaking it apart with a spatula.
  2. Season the Chicken: Stir in garlic powder, paprika, salt, and black pepper. Cook for an additional 2–3 minutes.
  3. Prepare the Tortillas: Warm the tortillas in a dry skillet for about 30 seconds on each side until pliable.
  4. Assemble the Tacos: On each tortilla, spoon a generous portion of the cooked chicken, then top with shredded cheese, chopped pickles, and a spoonful of cottage cheese.
  5. Add Crunchy Toppings: Finish with a handful of shredded cabbage on top of each taco.

Notes
