Ingredients
- 1 pound Ground Chicken
- 1 teaspoon Garlic Powder
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 8 small Tortillas
- 1 cup Shredded Mozzarella or Jack Cheese
- 1/2 cup Chopped Dill Pickles
- 2 tablespoons Pickle Brine (optional)
- 1 cup Shredded Cabbage
- 1/2 cup Cottage Cheese
Instructions
- Cook the Chicken: In a skillet over medium heat, add a splash of oil and the ground chicken. Cook until browned, about 5–7 minutes, breaking it apart with a spatula.
- Season the Chicken: Stir in garlic powder, paprika, salt, and black pepper. Cook for an additional 2–3 minutes.
- Prepare the Tortillas: Warm the tortillas in a dry skillet for about 30 seconds on each side until pliable.
- Assemble the Tacos: On each tortilla, spoon a generous portion of the cooked chicken, then top with shredded cheese, chopped pickles, and a spoonful of cottage cheese.
- Add Crunchy Toppings: Finish with a handful of shredded cabbage on top of each taco.
Notes
For a spicy kick, consider adding diced jalapeños to the chicken mixture or substituting chili powder for paprika.
