Ingredients

  • 1 pound ground chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella or Jack cheese
  • 8 small tortillas
  • 1/2 cup chopped dill pickles
  • 2 tablespoons pickle brine
  • 1 cup shredded cabbage
  • 1/2 cup cottage cheese blended with 1 teaspoon ranch seasoning and a squeeze of lemon


Instructions

  1. In a large bowl, combine the ground chicken, garlic powder, paprika, salt, and black pepper. Mix until all the seasonings are well incorporated.
  2. Heat a skillet over medium heat and add the chicken mixture. Cook for about 6-8 minutes, stirring occasionally, until the chicken is thoroughly cooked and no longer pink.
  3. In a separate pan, warm the tortillas on medium heat for 1-2 minutes on each side until they are soft and pliable.
  4. In a non-stick skillet, sprinkle shredded cheese in a thin layer and cook over medium-low heat until it becomes bubbly and crispy. Carefully slide a spatula underneath to lift them out.
  5. Place a scoop of the cooked chicken mixture onto each tortilla. Top with chopped dill pickles and shredded cabbage.
  6. Drizzle the tacos with the cottage cheese mixture and finish with a splash of pickle brine for that extra zing.
