Ingredients
- 1 pound ground chicken
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- 1 cup shredded mozzarella or Jack cheese
- 8 small tortillas
- 1/2 cup chopped dill pickles
- 2 tablespoons pickle brine
- 1 cup shredded cabbage
- 1/2 cup cottage cheese blended with 1 teaspoon ranch seasoning and a squeeze of lemon
Instructions
- In a large bowl, combine the ground chicken, garlic powder, paprika, salt, and black pepper. Mix until all the seasonings are well incorporated.
- Heat a skillet over medium heat and add the chicken mixture. Cook for about 6-8 minutes, stirring occasionally, until the chicken is thoroughly cooked and no longer pink.
- In a separate pan, warm the tortillas on medium heat for 1-2 minutes on each side until they are soft and pliable.
- In a non-stick skillet, sprinkle shredded cheese in a thin layer and cook over medium-low heat until it becomes bubbly and crispy. Carefully slide a spatula underneath to lift them out.
- Place a scoop of the cooked chicken mixture onto each tortilla. Top with chopped dill pickles and shredded cabbage.
