Ingredients
- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3-4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup parmesan cheese, grated
- 1 cup spinach, chopped (optional)
- Pasta, roasted vegetables, or mashed potatoes (for serving)
Instructions
- Season both sides of your chicken breasts with salt and pepper to enhance their natural flavor.
- Heat olive oil in a skillet over medium-high heat. Once heated, add the chicken and cook for 5-6 minutes on each side until golden brown and crispy.
- Remove the chicken from the skillet and set aside on a plate to keep it crispy.
- Add minced garlic to the pan, sautéing for about 30 seconds until fragrant but not browned.
- Pour in the cream while stirring continuously. Add the Italian seasoning and grated parmesan cheese. Mix until the cheese is melted and the sauce is smooth.
- Stir in the chopped spinach (if using) and let the sauce simmer for 2-3 minutes until it wilts.
- Return the crispy chicken to the pan, spooning the creamy sauce over the top. Let it simmer for one more minute.
- Serve hot over a bed of pasta, with roasted vegetables, or alongside creamy mashed potatoes.
Notes
For a beautiful presentation, garnish with freshly chopped parsley or additional grated parmesan. A squeeze of lemon juice can enhance flavors.
