Ingredients

  • 4 small to medium chicken breasts (or 2 large halved)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3-4 cloves garlic, minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup parmesan cheese, grated
  • 1 cup spinach, chopped (optional)
  • Pasta, roasted vegetables, or mashed potatoes (for serving)


Instructions

  1. Season both sides of your chicken breasts with salt and pepper to enhance their natural flavor.
  2. Heat olive oil in a skillet over medium-high heat. Once heated, add the chicken and cook for 5-6 minutes on each side until golden brown and crispy.
  3. Remove the chicken from the skillet and set aside on a plate to keep it crispy.
  4. Add minced garlic to the pan, sautéing for about 30 seconds until fragrant but not browned.
  5. Pour in the cream while stirring continuously. Add the Italian seasoning and grated parmesan cheese. Mix until the cheese is melted and the sauce is smooth.
  6. Stir in the chopped spinach (if using) and let the sauce simmer for 2-3 minutes until it wilts.
  7. Return the crispy chicken to the pan, spooning the creamy sauce over the top. Let it simmer for one more minute.
  8. Serve hot over a bed of pasta, with roasted vegetables, or alongside creamy mashed potatoes.

Notes

For a beautiful presentation, garnish with freshly chopped parsley or additional grated parmesan. A squeeze of lemon juice can enhance flavors.
