Ingredients
- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3-4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup parmesan cheese, grated
- 1 cup spinach, chopped (optional)
Instructions
- Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat.
- Add the chicken to the heated skillet, cooking for 5-6 minutes on each side until the chicken is golden and crispy. Remove the chicken and set aside.
- Lower the heat and add the minced garlic to the same skillet. Sauté for about 30 seconds, or until fragrant.
- Pour in the cream, stirring continuously to combine with the garlic. Add in the Italian seasoning and grated parmesan cheese, mixing until the sauce is smooth and well blended.
- Stir in chopped spinach and let the mixture simmer for 2-3 minutes until spinach is wilted and the sauce thickens slightly.
- Return the crispy chicken to the pan, spooning the sauce over the top. Allow to simmer for 1 minute before removing from heat.

Pat the chicken dry for optimal crispiness. Avoid overcrowding the skillet and adjust heat to prevent burning garlic. Allow chicken to rest for juiciness.
