Description

Juicy marinated chicken, fresh greens, and creamy dressing wrapped in a soft tortilla, delivering bright flavors and comfort.


Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 pound / 450g)
  • 2 tablespoons olive oil (extra virgin)
  • Juice and zest of 1 large lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano or 1 tablespoon fresh, finely chopped
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried
  • Salt and freshly ground black pepper, to taste
  • ½ cup mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced
  • 1/2 cup cherry tomatoes, halved (optional)
  • 4 large flour tortillas (10-inch / 25cm size)
  • 2 cups chopped romaine lettuce
  • ¼ cup shaved Parmesan cheese
  • Optional: croutons, crushed


Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the olive oil, lemon juice and zest, minced garlic, oregano, thyme, and a generous pinch of salt and pepper.
  2. Marinate the Chicken: Add chicken breasts to the marinade and coat evenly. Cover and refrigerate for at least 20 minutes, ideally 1 hour.
  3. Prepare the Caesar Dressing: While the chicken marinates, combine mayonnaise, grated Parmesan, lemon juice, Dijon mustard, minced garlic, and a little salt and pepper in a small bowl. Whisk until smooth.
  4. Grill the Chicken: Preheat your grill or grill pan to medium-high heat. Grill chicken for 5-6 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
  5. Slice and Assemble: Transfer the grilled chicken to a cutting board and let it rest for 5 minutes before slicing. Lay tortillas flat, spread Caesar dressing along the center, and layer in chopped romaine, sliced chicken, cherry tomatoes, shaved Parmesan, and optional croutons.
  6. Roll the Wraps: Roll tortillas tightly, folding in the sides. Slice each wrap in half diagonally and serve immediately.

Notes

Grill extra chicken for use in salads or sandwiches. Adjust seasoning of the dressing before serving if necessary.
