Description

A rich and hearty chili with shredded chicken, creamy broth, and zesty spices, perfect for cozy evenings.


Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup heavy cream
  • Fresh cilantro for garnish


Instructions

  1. Sauté the diced onion and minced garlic until translucent, about 3-5 minutes.
  2. Add the shredded chicken, drained white beans, drained corn, chicken broth, cumin, chili powder, salt, and pepper. Stir well to combine.
  3. Bring the mixture to a boil over medium-high heat, then reduce the heat to a simmer. Let it cook for about 20 minutes.
  4. Stir in the heavy cream and continue to simmer for an additional 5 minutes.
  5. Serve the chili hot, garnished with fresh cilantro.

Notes

For a lighter version, consider using half-and-half instead of heavy cream. You can also customize with your favorite vegetables.
