A quick and hearty pasta dish featuring shredded rotisserie chicken in a rich, creamy sauce with spinach.

Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about one minute until fragrant.
  3. Pour in the heavy cream and chicken broth, stirring well. Allow to simmer for about five minutes until the sauce thickens slightly.
  4. Stir in the shredded chicken and fresh spinach. Cook until the spinach wilts, about two minutes.
  5. Combine the cooked pasta with the creamy sauce, tossing until everything is evenly coated.
  6. Season with salt and pepper to taste, and serve warm, garnished with freshly grated Parmesan cheese.

Notes

For extra flavor, consider adding red pepper flakes or Italian herbs to the sauce.
