  • 2 large boneless, skinless chicken breasts (about 1.5 pounds total)
  • 4 tablespoons olive oil (2 for searing, 2 for potatoes)
  • 6-8 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1.5 pounds Yukon Gold or Russet potatoes, peeled and cut into 1-inch cubes
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)
  • 1 cup low sodium chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the cubed potatoes with 2 tablespoons of olive oil, garlic powder, onion powder, chopped rosemary, along with salt and pepper in a large bowl.
  3. Spread the seasoned potatoes in a single layer on a baking sheet and roast for 30-40 minutes until golden brown and crispy, flipping halfway through.
  4. Pat the chicken breasts dry and rub them with Italian seasoning, paprika, salt, and pepper.
  5. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 3-4 minutes on each side until golden brown and cooked through.
  6. Set the chicken aside and tent it with foil to keep warm.
  7. Add the minced garlic (6-8 cloves) to the skillet and sauté for about 30 seconds until fragrant.
  8. Pour in the chicken broth, bring to a simmer, and scrape the browned bits from the pan.
  9. Reduce heat to low, then stir in the heavy cream, Parmesan cheese, and the remaining minced garlic (2 cloves).
  10. Mix cornstarch with cold water to create a slurry, then slowly incorporate it into the sauce while whisking until it thickens (about 2-3 minutes).
  11. Stir in lemon juice and adjust seasoning with salt and pepper as needed.
  12. Return the seared chicken to the skillet and spoon the creamy sauce over to coat.
  13. Optional: Pop the skillet in the oven for an additional 5-10 minutes, or simmer on the stovetop for a few more minutes.
  14. Garnish with fresh parsley before serving over the crispy potatoes.
