Description

A comfort-filled Italian dish featuring crispy chicken breasts baked in marinara sauce and topped with mozzarella and Parmesan cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup flour
  • 2 large eggs
  • 3 cloves fresh garlic, minced
  • 1 cup panko breadcrumbs
  • 2 tbsp extra virgin olive oil
  • 2 cups marinara sauce
  • 1 cup freshly grated mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish by spraying it with nonstick cooking spray.
  2. Pat the chicken breasts dry and season generously with salt and pepper.
  3. Create an assembly line with three bowls: one for flour, one for beaten eggs mixed with minced garlic, and one for panko breadcrumbs mixed with Italian seasoning.
  4. Dredge each chicken breast in flour, ensuring it’s coated evenly.
  5. Dip it into the egg wash, then coat thoroughly with the panko mixture.
  6. In a large skillet over medium heat, heat the olive oil until it shimmers. Sear the breaded chicken for about 4-5 minutes on each side until golden brown.
  7. Transfer the chicken to the baking dish. Spoon marinara sauce generously over each piece and top with mozzarella and Parmesan cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.

Notes

Allow the chicken to rest after searing for juicier meat. Use a meat thermometer to ensure chicken is properly cooked.
