Description
A comfort-filled Italian dish featuring crispy chicken breasts baked in marinara sauce and topped with mozzarella and Parmesan cheese.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup flour
- 2 large eggs
- 3 cloves fresh garlic, minced
- 1 cup panko breadcrumbs
- 2 tbsp extra virgin olive oil
- 2 cups marinara sauce
- 1 cup freshly grated mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and prepare a baking dish by spraying it with nonstick cooking spray.
- Pat the chicken breasts dry and season generously with salt and pepper.
- Create an assembly line with three bowls: one for flour, one for beaten eggs mixed with minced garlic, and one for panko breadcrumbs mixed with Italian seasoning.
- Dredge each chicken breast in flour, ensuring it’s coated evenly.
- Dip it into the egg wash, then coat thoroughly with the panko mixture.
- In a large skillet over medium heat, heat the olive oil until it shimmers. Sear the breaded chicken for about 4-5 minutes on each side until golden brown.
- Transfer the chicken to the baking dish. Spoon marinara sauce generously over each piece and top with mozzarella and Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
Notes
Allow the chicken to rest after searing for juicier meat. Use a meat thermometer to ensure chicken is properly cooked.
