Ingredients
- 1 rotisserie chicken, shredded
- 8 cups chicken broth
- 2 cups egg noodles
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Start by heating the olive oil over medium heat in a large pot.
- Add the chopped onions, carrots, celery, and minced garlic. Sauté these veggies until they are tender and fragrant, about 5–7 minutes.
- Pour in the chicken broth and bring everything to a boil.
- Toss in the egg noodles and cook according to the package instructions until they are al dente.
- Stir in the shredded rotisserie chicken and heavy cream, mixing well until combined.
- Season your soup with salt and pepper to taste.
- Let it simmer for another 5–10 minutes until everything is heated through.
- Finally, garnish with fresh parsley before ladling it into bowls.
Notes
For a healthier twist, use whole wheat noodles or light cream. Add herbs like thyme or rosemary for extra flavor.
