Description

Ingredients

  • 1 rotisserie chicken, shredded
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Start by heating the olive oil over medium heat in a large pot.
  2. Add the chopped onions, carrots, celery, and minced garlic. Sauté these veggies until they are tender and fragrant, about 5–7 minutes.
  3. Pour in the chicken broth and bring everything to a boil.
  4. Toss in the egg noodles and cook according to the package instructions until they are al dente.
  5. Stir in the shredded rotisserie chicken and heavy cream, mixing well until combined.
  6. Season your soup with salt and pepper to taste.
  7. Let it simmer for another 5–10 minutes until everything is heated through.
  8. Finally, garnish with fresh parsley before ladling it into bowls.
