  • 1 pound chicken breast, cut into strips
  • 8 ounces mushrooms, sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Cooked rice, mashed potatoes, or pasta (for serving)

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the chicken strips and cook until they’re browned and fully cooked through.
  3. Incorporate the sliced mushrooms and minced garlic, cooking until the mushrooms are tender.
  4. Pour in the heavy cream and sprinkle in the grated Parmesan cheese. Allow it to simmer for a few minutes until the sauce thickens.
  5. Stir in the fresh spinach and cook until it’s wilted.
  6. Season with salt and pepper to taste, then serve hot over your choice of rice, mashed potatoes, or pasta.

Notes
