Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 12 oz bowtie (farfalle) pasta
- 2 cups broccoli florets
- 1 tsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 1 tsp Dijon mustard
- Juice and zest of 1 lemon
- 6 tbsp unsalted butter
- 1/2 cup grated Parmesan cheese
- 1/2 cup reserved pasta water
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 1/2 tsp crushed red pepper flakes (optional)
Instructions
- Prepare your ingredients by cutting the chicken and measuring spices, pasta, and veggies.
- Cook the pasta in salted boiling water; add broccoli in the last 2 minutes.
- Heat olive oil in a skillet and cook the chicken with seasonings until golden brown.
- Add butter to the skillet, then stir in mustard, lemon juice, and zest, followed by Parmesan until creamy.
- Combine the drained pasta and broccoli with the sauce, tossing gently.
- Garnish with parsley, chives, and Parmesan before serving.
Notes
You can substitute chicken breasts with thighs for a juicier option. Adjust the spices to your preference.
