Ingredients
- 3 cups cooked chicken, chopped or shredded
- ¾ cup celery, diced (about 2-3 stalks)
- ¼ cup red onion, diced
- ⅓–⅔ cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Prep your chicken by removing meat from the bones and chopping into bite-sized pieces.
- Make the dressing by whisking together mayonnaise, Dijon mustard, and lemon juice in a large bowl.
- Add the diced celery, red onion, and parsley to the bowl and mix.
- Add the chopped chicken to the bowl and gently stir until everything is coated.
- Season with salt and pepper, adjusting to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
