Description

A delicious Chicken Pesto Sandwich featuring tender chicken breasts, melted mozzarella, and fresh basil pesto on toasted ciabatta rolls.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup of pesto sauce
  • 4 slices of fresh mozzarella cheese
  • 4 ciabatta rolls or sandwich bread
  • Olive oil for cooking
  • Salt and pepper to taste
  • Fresh basil leaves (optional for garnishing)


Instructions

  1. Heat a drizzle of olive oil in a skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper, then add them to the hot skillet. Cook for about 6-7 minutes on each side until the chicken is fully cooked and has a beautiful golden-brown crust.
  3. Place a slice of mozzarella cheese atop each chicken breast, allowing it to melt slightly in the final minute of cooking.
  4. Toast the ciabatta rolls in the skillet until they are golden on the outside.
  5. Spread a generous amount of pesto sauce on the bottom half of each toasted roll.
  6. Layer the cooked chicken with melted mozzarella on top of the pesto on each roll.
  7. Add fresh basil leaves for an extra burst of flavor, then cover with the top half of the roll.
  8. Serve while warm and enjoy your delicious Chicken Pesto Sandwich!

Notes
