A comforting Chicken Noodle Soup that warms the heart and soothes the soul, perfect for chilly days or when feeling under the weather.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 8 ounces egg noodles

Instructions

  1. In a large pot, heat a drizzle of oil over medium heat.
  2. Add the onions, carrots, celery, and minced garlic. Sauté until the vegetables soften, about 5 minutes.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the shredded chicken, thyme, parsley, salt, and pepper. Cook for about 10 minutes to allow flavors to meld.
  5. Add the egg noodles and cook according to package instructions until al dente.
  6. Taste and adjust seasoning if needed, then serve warm.

Notes

Garnish with freshly chopped parsley or black pepper. Serve with warm crusty bread or a green salad.
