Description
Comforting chicken enchiladas filled with shredded chicken, cheese, and topped with zesty enchilada sauce.
Ingredients
- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 can (10 oz) enchilada sauce
- 8 corn tortillas
- 1/2 cup diced onions
- 1/2 cup chopped cilantro (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine shredded chicken, half of the cheese, and half of the enchilada sauce.
- Take a tortilla, fill it with the chicken mixture, and roll it up. Place it seam-side down in a baking dish.
- Repeat with the remaining tortillas.
- Once all tortillas are in the dish, pour the rest of the enchilada sauce over them and sprinkle the remaining cheese on top.
- Bake in the oven for 20-25 minutes until the cheese is melted and bubbly.
- Garnish with diced onions and cilantro if desired. Serve hot and enjoy!
Notes
For added flavor, warm your tortillas slightly before filling. Experiment with different cheeses or add vegetables.
