Description

Comforting chicken enchiladas filled with shredded chicken, cheese, and topped with zesty enchilada sauce.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 can (10 oz) enchilada sauce
  • 8 corn tortillas
  • 1/2 cup diced onions
  • 1/2 cup chopped cilantro (optional)
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine shredded chicken, half of the cheese, and half of the enchilada sauce.
  3. Take a tortilla, fill it with the chicken mixture, and roll it up. Place it seam-side down in a baking dish.
  4. Repeat with the remaining tortillas.
  5. Once all tortillas are in the dish, pour the rest of the enchilada sauce over them and sprinkle the remaining cheese on top.
  6. Bake in the oven for 20-25 minutes until the cheese is melted and bubbly.
  7. Garnish with diced onions and cilantro if desired. Serve hot and enjoy!

Notes

For added flavor, warm your tortillas slightly before filling. Experiment with different cheeses or add vegetables.
