Ingredients

  • 1 pound ground chicken
  • 8 small street taco flour tortillas
  • Salt and pepper to taste
  • 2 hearts of romaine lettuce, chopped finely
  • 1/2 cup croutons, chopped
  • 1/4 cup Caesar dressing
  • 1/2 cup shredded Parmesan cheese, divided


Instructions

  1. Prepare the salad mixture: Combine chopped romaine, croutons, 1/4 cup Parmesan cheese, and Caesar dressing in a large bowl; toss until evenly coated.
  2. Cook the chicken mixture: Preheat your grill or skillet over medium-high heat. Mix ground chicken with remaining Parmesan, salt, and pepper.
  3. Spread the chicken: Divide the mixture into 8 portions and spread each over a tortilla.
  4. Cook the tacos: Place tortillas chicken-side down on the grill; cook for about 3 minutes until chicken is crispy, then flip and cook for another 30-90 seconds.
