Ingredients
- 1 pound ground chicken
- 8 small street taco flour tortillas
- Salt and pepper to taste
- 2 hearts of romaine lettuce, chopped finely
- 1/2 cup croutons, chopped
- 1/4 cup Caesar dressing
- 1/2 cup shredded Parmesan cheese, divided
Instructions
- Prepare the salad mixture: Combine chopped romaine, croutons, 1/4 cup Parmesan cheese, and Caesar dressing in a large bowl; toss until evenly coated.
- Cook the chicken mixture: Preheat your grill or skillet over medium-high heat. Mix ground chicken with remaining Parmesan, salt, and pepper.
- Spread the chicken: Divide the mixture into 8 portions and spread each over a tortilla.
- Cook the tacos: Place tortillas chicken-side down on the grill; cook for about 3 minutes until chicken is crispy, then flip and cook for another 30-90 seconds.
- Assemble the tacos: Remove from heat and top each with a scoop of Caesar salad mixture; serve immediately.
