A warm and hearty Chicken and Stuffing Casserole melts in your mouth, combining tender chicken with savory stuffing and creamy mushroom sauce for a comforting meal.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 package stuffing mix
  • 1 can cream of mushroom soup
  • 1 cup chicken broth (or vegetable broth)
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the chicken in olive oil over medium heat for 6-8 minutes per side until browned and fully cooked.
  3. Prepare the stuffing mixture by combining stuffing mix, mushroom soup, chicken broth, mixed vegetables, garlic powder, salt, and pepper in a bowl.
  4. Assemble the casserole by spreading the cooked chicken in a dish and pouring the stuffing mixture over it.
  5. Bake covered with foil for 25-30 minutes.
  6. Crisp the top by removing the foil and baking for an additional 10 minutes.

Notes

Let the casserole rest for 5-10 minutes before serving. For variations, try adding cheese, herbs, or spicy elements.
