Ingredients
- 2 cups cooked chicken, shredded or diced
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 medium onion, diced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 teaspoon dried thyme
- 1 teaspoon minced garlic
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup milk
- ¼ cup melted butter
Instructions
- Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and chopped celery. Sauté until the vegetables are tender and the onion is translucent, about 5-7 minutes.
- Add broth and chicken: Stir in the chicken broth, shredded chicken, thyme, garlic, salt, and pepper. Bring the mixture to a gentle simmer.
- Prepare the dumplings: In a separate bowl, mix together the flour, baking powder, salt, and sugar. Add the milk and melted butter, stirring until combined. The mixture should be thick and slightly sticky.
- Drop dumplings into the broth: Using a spoon, drop rounded tablespoons of the dumpling mixture into the simmering broth. Cover the pot and let the dumplings cook without lifting the lid for 15 minutes.
- Serve hot: After 15 minutes, gently lift the lid and check that the dumplings have cooked through. Serve the Chicken & Dumplings hot, garnished with fresh herbs if desired.
Notes
For a richer flavor, consider adding a splash of cream to the broth just before serving. Fresh herbs can brighten the dish; consider thyme or parsley for garnish.
