Description

A warm, hearty meal combining tender chicken, fluffy dumplings, and savory broth, perfect for cozy nights.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 medium onion, diced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon minced garlic
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup milk
  • ¼ cup melted butter

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and chopped celery. Sauté until the vegetables are tender and the onion is translucent, about 5-7 minutes.
  2. Add broth and chicken: Stir in the chicken broth, shredded chicken, thyme, garlic, salt, and pepper. Bring the mixture to a gentle simmer.
  3. Prepare the dumplings: In a separate bowl, mix together the flour, baking powder, salt, and sugar. Add the milk and melted butter, stirring until combined. The mixture should be thick and slightly sticky.
  4. Drop dumplings into the broth: Using a spoon, drop rounded tablespoons of the dumpling mixture into the simmering broth. Cover the pot and let the dumplings cook without lifting the lid for 15 minutes.
  5. Serve hot: After 15 minutes, gently lift the lid and check that the dumplings have cooked through. Serve the Chicken & Dumplings hot, garnished with fresh herbs if desired.

Notes

For a richer flavor, consider adding a splash of cream to the broth just before serving. Fresh herbs can brighten the dish; consider thyme or parsley for garnish.
