  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 bell peppers (red, green, or yellow)
  • 1 medium onion
  • 2 cloves garlic, minced
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Mix Cajun seasoning, garlic powder, onion powder, paprika, thyme, salt, and black pepper in a small bowl. Coat each chicken breast evenly with the spice mixture.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side until fully cooked and golden brown. Remove from the skillet.
  3. Add 1 tablespoon of olive oil to the same skillet. Toss in sliced bell peppers and onions, sautéing on medium heat for about 5-6 minutes until softened. Add minced garlic and sauté for an additional 1-2 minutes.
  4. Slice the cooked chicken into thin strips and return it to the skillet with the sautéed bell peppers and onions. Toss everything together and cook for another 2-3 minutes.
  5. Garnish with fresh parsley or cilantro if desired. Serve hot and enjoy!

Notes

Feel free to mix and match bell pepper colors for a visually appealing dish. Customize spice levels with cayenne pepper if preferred.
