A comforting and easy to make dish that combines creamy Alfredo sauce with Cajun chicken and orzo, perfect for busy weeknights.

Ingredients

  • 2 cups orzo pasta
  • 1 pound chicken breast, diced
  • 1 tablespoon Cajun seasoning
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add in the diced chicken and sprinkle with Cajun seasoning. Cook until the chicken is nicely browned.
  3. Throw in the chopped onion, bell pepper, and minced garlic, sautéing until they soften.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Stir in the orzo and let it cook until tender, which should take about 10 minutes.
  6. Reduce the heat and mix in the heavy cream and Parmesan cheese, stirring until you achieve a creamy texture.
