Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups breadcrumbs (preferably Italian-style)
- ½ cup grated Parmesan cheese
- 2 cups marinara sauce (homemade or store-bought)
- 2 cups shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1 teaspoon salt
- ½ teaspoon black pepper
- Olive oil for frying
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C) to ensure it’s ready for the final melt. Flatten the chicken breasts using a meat mallet for even cooking.
- Set up three shallow dishes: one for flour, one for beaten eggs, and one for breadcrumbs mixed with garlic powder, dried basil, salt, and pepper.
- Coat each chicken breast first in flour, shaking off any excess. Then dip it into the egg, and coat with the breadcrumb mixture for an even layer.
- Heat olive oil in a large skillet over medium-high heat. Fry each breaded chicken breast for about 4-5 minutes per side, until golden brown.
- Spread some marinara sauce in a baking dish, place the fried chicken on top, pour the remaining sauce over, and sprinkle mozzarella cheese on top.
- Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden brown.
Notes
Consider garnishing with fresh basil for added flavor and a pop of color. Drizzle with olive oil before serving.
