  • 6 cups chicken broth
  • 2 cups water
  • 1/4 cup soy sauce
  • 1 tbsp fresh ginger, minced

  • 2 carrots, sliced
  • 1 cup snap peas or snow peas
  • 1 bell pepper, sliced
  • 8 oz rice noodles or egg noodles

Instructions

  1. Prepare the ingredients by gathering and chopping all vegetables.
  2. Cook the chicken in a large pot with broth, water, soy sauce, ginger, and garlic. Bring to a boil, then simmer for 15-20 minutes.
  3. Shred the cooked chicken using two forks.
